cucumber salad


Taking some feedback from my training, which has been laid back, without great planning, and based on whatever I felt like doing on most days, I offer a cucumber, tomato, onion, pepper salad.  Another way to use up produce during our season of plenty.

4-5 medium cucumbers
10-15 small roma tomatoes
4 medium bell peppers
6 small onions

Slice cucumbers thin.  Dice tomatoes, peppers, onions.  Mix with balsamic vinegar, olive oil, honey, apple cider vinegar, salt and pepper to taste.  Marinate over night in refrigerator for tastes to develop.
